Produced for over 200 years andrut kaliski was registered on the list of protected products and was placed on page 952 of the catalogue of food products recommended in EU countries. It is now officially recognized as one of 850 regional products with Protected Geographical Indication.
For confectioners from Poland andrut does not have anything in particular – it is a normal wafer interspersed with a layer of cream or other filling. However, ”andrut kaliski” (a type of “andrut” produced in the region of Kalisz) consists solely of flour, water and sugar mixed together in special proportions. The thin, circular rings that melt in one’s mouth are very delicate.
People from the Kalisz region were striving to make their andrut known the same way people from Zakopane did with their oscypek. They have proved it to be the typical product of this particular city. LOT (Local Tourist Organization) assembled historical records and accounts, so that to leave no doubt as to the origin of andrut. This data has, in a significant way, given support to organization’s attempts at grating the product its official name "andrut kaliski".
Products that have also been added to the list are: St. Martin twirl, fried cheese from Nowy Tomy¶l and Camelina oil from Szamotu³y. 6 other products have appeared on the list previously.
The etymology of the word andrut remains unexplained. It is known that their production was established in the middle of the 19th century. People of Kalisz enjoyed in those years walking through the Town Park created in 1798 and buying andruty. Mention of a devise used for the production of andruty appears on the inventory count list of a mansion in Wrz±ca, which was sold in 1811. Hence their production must have started even earlier.
Still in 1989 there were 41 companies engaged in the production of andruty. Today there are merely a few. Their owners claim that andruty have a unique taste that can’t be compared to anything else, and besides each wafer has a slightly different colour.
“This is a true handicraft.” they say.
